If you are vegetarian or are watching your sodium intake, for a fun new twist to an old favorite try adding in some green side dishes featuring nutrient dense leafy greens like kale, collard greens or bok choy.
These dishes can be intimidating since many have no idea how to prepare them. First, you should wash off the greens and then pull them off the rinds of the leaves creating bite size pieces.
